Our Spirits are a labour of love, intellectual curiosity and the commitment to the art and science of craft distilling as well as the soul of the craft movement which inspires us every day. TAD was created by longtime friends Warrick and Shanna-Rae who were inspired to share their passion for craft with the world.

HOW WE MAKE OUR GRAIN BASED SPIRITS
ARTISANAL MILLThe grain is milled to a fine consistency in our artisanal mill.
MASHINGMilled grains are added to strike water heated to above 80°C and "cooked" in our mash tun to create our mash, the mash is then cooled and yeast is added.
FERMENTINGThe mash is then moved to our fermentation tanks where over 4-5 days the yeasts eat the sugar and create a low % alcohol mash.
DISTILLATIONOur fermented mash is then transferred to our still where the mash is heated until the alcohol vaporises and moves up through the distillation column where it condenses and is redistilled 3 more times for a total of 4. The copper in the distillation column removes sulfites from the alcohol.
SPIRIT TANKAs the liquid is cooled and poured off the tap - the heads, hearts and tails are collected and separated. Only the hearts are used for our spirits.
FINISHINGThe hearts are then blended and diluted to bring our spirits to a drinking %. Each bottle is then filled and labelled by hand.
